Raw rice milling follows a straightforward process of cleaning, hulling, whitening, and polishing to produce white rice directly from paddy. Boiled and steam rice processing involves an additional pre-milling stage where paddy is soaked, steamed, and dried before milling, which gelatinizes the starch inside the grain, significantly reducing breakage during milling and improving the nutritional profile of the final product. Single boiled and double boiled variants differ in the intensity and duration of the parboiling cycle, each producing rice with distinct texture, colour, and cooking characteristics preferred in different regional markets.
